The Saor, or savor, is a base of onions in sweet and sour sauce used by Venezia fishermen to store food during sea crossings. Today it accompanies some delicious dishes such as 'Sarde in saor' (Sardines), a recipe perhaps of Jewish origin. The dish consists of a layer of fried sardines covered by the sauce including raisins and pine nuts that is prepared over a long period. The fishermen ate their sardines in sauce a long time after its preparation so, even today, the pot is prepared at least one day before its consumption.
