The thick soup of 'rice and peas' is a dish of the culinary tradition of the Serenissima, probably from Byzantium that quickly spread to the inland areas of the Veneto. For the realization of this plate, every part of peas from Vicenza, including pods are boiled to obtain the cooking broth. Rice and peas was the celebratory dish of spring and was offered to the Doge in the Banquet Hall of the Ducal Palace during the celebrations of the patron San Marco on April 25.
