The olive of Gaeta is tapered, of blue colour and has a vinous flavour that is typical of Itrana varieties. It is used to produce an excellent olive oil and the famous olives in brine. This oil was described by Virgil in the Aeneid, and reaches its commercial peak in 1400s, thanks to the trade and travel by the citizens of the Duchy of Gaeta. Gaeta olives and oil are appreciated throughout the Mediterranean. In 1498 the Duke d'Este, Ercole I, asking the ambassador to Rome to procure the famous Gaeta olives. In 1586 a resolution of the Gaeta Council regulated the collection, sale, storage and export of black olives.
