Oil production dates back to the Etruscan times. Testimony is the wreck of the ship Giglio (600 BC) with its amphorae full of preserved olives and the so-called "Tomb of the Olive" Cerveteri (575-550 BC), containing a kind of boiler full of olive stones. The olive tree was a sacred plant for the Etruscans and priestesses carried its branches during the processions. The bitter taste of the oil was "softened" with techniques such as salting, immersion in water scented with dried fennel and spicy resin from the mastic tree.
